First Pinterest Night; Spicy Sausage Pasta


Hello, readers! Me again with another food post.
As mentioned in an earlier post, I had an idea that would a.) help us post more on here,
and b.) give us the opportunity to try a new recipe every week.
Being fairly new to Pinterest, I've been amazed at the mass number
 of good looking recipes I've come across.
So, I decided we should have a weekly 'Pinterest Night'
where we make a meal based on a recipe we have found.
The day of the week will vary, but it will usually be a Friday or Saturday.
In order to make sure we both will enjoy the meal, Brittanie and I alternate weeks picking
 a recipe off of the other's Pinterest board.

Since it was my idea, I start off this weekly segment.
For our first Pinterest Night, I chose the recipe Spicy Sausage Pasta.

Over all the meal was quite enjoyable. It is also relatively quick and easy to make.
If you like a mild spiciness to your food, you will enjoy this.
It's not fire breathing spicy, but it still has a light kick to it.
The original post said "On a spiciness scale of 1-10, with 1 being mild salsa,
and 10 being a ghost pepper dipped in sriracha sauce, this pasta is about a 3."
I'd say that is a pretty fair explanation of it.
You can also change the degree of spiciness depending on which Ro-Tel you grab.
The most difficult part of this meal is having to smell it the whole time it is cooking,
but needing to wait to eat it. I don't know about you,
but to me smoked sausage and onions cooking in a pan smells delicious.
But in all honesty, if you can chop an onion, and open a can, then you should be able to make this recipe.
It yields about 6 portions. Unless you eat large portions like I do. ^.-

Spicy Sausage Pasta

Ingredients
  • 1 Tablespoon Olive Oil
  • 1 - 14 oz. Package of Smoked Turkey Sausage, Sliced into Rounds
  • 1 1/2 Cup Diced Onions
  • 2 Cloves Garlic, Minced
  • 1 - 14 oz. Can Low Sodium Chicken Broth 
  • 1 - 10 oz. Can Ro-Tel Tomatos and Green Chilis (Choose Heat Level according to personal preference)
  • 1/2 Cup Heavy Cream
  • 8 oz. Penne Pasta (About 2 1/2 Cups)
  • 1/2 Teaspoon Black Pepper
  • Thinly Sliced Scallions (Optional)
  • Salt (To Taste)

Preparation

Heat oil over medium-high heat in a cast iron skillet (or other oven-safe skillet) until smoking. 



Add the sausage and onion, and cook until lightly browned, about 4 minutes. 
Add in the garlic, and cook for 30 seconds.



Add the broth, Ro-Tel, heavy cream, uncooked pasta, and pepper, and give the mixture a good stir. 
Bring to a boil, cover the skillet, and reduce heat to medium-low. 
Simmer until the pasta is tender, about 15 minutes, stirring once or twice while cooking. 
Preheat the broiler while the pasta is cooking. 



Remove the skillet from the heat, and stir in 1 cup of the cheese. 
Taste, and add salt as needed. Top with the scallions (if using them) and remaining cheese. 
Broil until the cheese is melted and lightly browned - about 3 minutes.
(Make positively sure you're using a broil safe skillet / pan.
Aluminum 1 time use pans work, if you don't own a cast iron skillet like us.)

Yields ~ 6 Portions
