Mama Jones' Vegetarian Meatloaf


This is a recipe I got from my sister-in-law's mother, Mama Jones.

 I actually made this a few weeks ago, and haven't gotten around to posting it. 

It was fairly simple to make, and was a good alternative to meat, or fake ground beef.
Dave's mother came up for a little stay, and while she was here, she helped us make it.
She loved it, and told us she would be sure to make it when she got back.
Dave and I thought it was good too!

Unfortunately for us though, we did two things wrong.
We cooked it a little too long, and it got dry, 
and we didn't chop the walnuts enough.
But it was our first time making it, and even then it wasn't bad. 
We'll definitely be make it again sometime though.

Momma also made some red skinned potatoes to go with it. 


Recipe for Vegetarian 'Meat'loaf

Ingredients
  • 3 Cups Fresh Whole Wheat Bread Crumbs
  • 1 Cup Finely Ground Walnuts (Or Pecans)
  • 1 Cup Finely Chopped Walnuts (Or Pecans)
  • 1/2 Cup Wheat Germ
  • 2 Tbsp Soy Sauce
  • 1/2 Cup Ketchup
  • 4 Tbsp Butter
  • 1 Large Onion, Chopped
  • 3-4 Cloves Garlic, Minced
  • 2 Eggs, Beaten
  • 1 Cup Chedder Cheese, Grated
  • 2 Tbsp Dried Parsley
  • Salt, and Pepper to taste

Directions
Preheat your oven to 350 degrees.

In a large bowl mix together the whole wheat bread crumbs, both cups of walnuts, wheat germ, soy sauce, and ketchup.


Meanwhile saute the butter, onions, and garlic. Saute until the onions become translucent. Mix the sauteed mixture into the bowl with the other ingredients.




Mix in the two beaten eggs, cheddar cheese, parsley, salt, and pepper.


There was so much we didn't have a bowl big enough,
we had to improvise with a large popcorn bowl.
Press the mixture into a well oiled loaf pan. 
Bake at 350 degrees for 1 hour.




* You can cover the top of the loaf with ketchup prior to baking if desired 
-OR- 
cover with 1/2 cup of cheddar cheese during the last 10 minutes of cook time.
